How often should a commercial ice machine be cleaned and sanitized?

Many manufacturers call for cleaning and sanitizing at least every six months, and more often with hard water or yeast in the air (bakeries, breweries, pizza shops). Follow the manufacturer and your local health code.

What is the difference between ice machine cleaner and sanitizer?

Cleaner removes scale and mineral buildup; sanitizer kills bacteria and slime. Use the products approved by the manufacturer, cleaner first, then sanitizer.

Why record freeze and harvest times?

Long cycles can point to a dirty condenser, scale, low water flow or a refrigeration problem. Compare them with the manufacturer cycle time chart for the water and air temperatures you recorded.
